Dijon-Beaune Mag n°26
Around the world through the five senses
10/2012

During the celebrated wine auctions, Beaune-based chef Laurent Parra gave free rein to his talent and took his explorations well beyond the confines of France. Through a range of amuses-bouches, he took a fresh look at dishes made famous by his peers around the world to accompany Bouchard Aîné & Fils’s most celebrated appellations.

A wonderful selection of premier and grand crus perfectly showcased the universal nature of the foods on offer. These included a succulent skewer of crispy chicken glazed with citron honey from Hong Kong, matched with a Meursault Premier Cru “Le Porusot”.

A series of original dishes from the US, Canada, Japan and China were presented along the Tour of the Five Senses®, to be enjoyed during this year’s wine auction. Over 600 visitors came along to sample these eclectic flavor combinations and Burgundy wines with a special mise en scène to illustrate each country.
