Nose: strong notes of exotic fruits and white flowers.
Palate: rich and full-bodied though light on the palate, underpinned by a pleasing acidity.
Food and wine pairing
The perfect accompaniment for shellfish, quenelles, fish, frogs' legs, white meats in a cream sauce, whitebait, poached poultry, sweetbreads...
The vines are planted on small, steep cirques with an eastern/south-eastern exposure at altitudes of between 250 and 300 metres.
Vinification and maturing
The wine was aged in barrels for 10 months with no racking to bring out its minerality. A proportion of 30% new French oak barrels was used to bring a subtle, delicate flavour to the wine.
Vintage : 2012
The winegrowers certainly suffered Mother Nature’s whims in 2012, with hail, shatter, summer rain, sudden shifts in temperature, almost constant humidity, and mildew, both downy and powdery. But a hot and sunny August in Burgundy saved the day and the harvest. As a consequence, yields were very small but the extreme concentration foretells exceptional quality.
