Food and wine pairing
As an aperitif, with blanquettes, poultry or fish in cream sauce, saumon with sorrel, foie gras, lobster or chicken with morrel mushrooms.
A Grand Cru appellation producing strictly white wines in the Côte de Beaune which extends over just under 72 hectares, 48+ of which are in the commune of Aloxe Corton, 17+ in the commune of Pernand-Vergelesses and 6+ in Ladoix-Serrigny. The total production is 2 200 hectoliters. The soils are marl and clay in the higher areas.
Vinification and maturing
Pneumatic pressing of the harvest during 2 hours followed by 24 hours of settling of the juice. Alcoholic fermentation in oak barrels with stirring of the lees once a week to develop aromatic potential. Maturing in 30% new oak.
