Since 2008, Bouchard Aîné & Fils has celebrated the Hospices de Beaune Wine Auction weekend in November with a special event to enchant the senses through some original food and wine combinations.

Sousbois, vins, truffes et champignons de BourgogneAnd this year, Bouchard Aîné & Fils invites you to take a stroll through the Burgundy woods with a tasting that combines its wines with the very special aromas of mushroom that sometimes find an echo in very mature Burgundy wines. This is a veritable exercise in style to surprise and charm your taste buds, in which the earthy flavors of Burgundy truffle provide a heavenly match for the crus of the Côte d’Or – two treasures from a single terroir.

The 18th century cellars will be decorated to match the theme, taking you on a journey through Burgundy with its vines and forests, its fairytales and legends.

The menu of delicious treats and matching wines has been concocted by Beaune chef Laurent Parra in partnership with Bouchard Aîné & Fils’s enologist:

  • Beaune Premier Cru Les Marconnets 2017 white, in the barrel 

  • Crémant de Bourgogne in magnums & woodland chips 

  • Beaune Premier Cru Les Marconnets 2015 white & jambon persillé with Burgundy truffle 

  • Meursault 2015 

  • Pommard La Chanière 2015 & mushroom and foie gras terrine 

  • Nuits-Saint-Georges Premier Cru Les Chabœufs 2005 & tortilla of black chanterelles, truffle crisp and woodland seeds 

  • Gevrey-Chambertin 1983 in magnums & truffled Brillat-Savarin cheese

The tasting is hosted in the cellars of the Hôtel du Conseiller du Roy, 4 boulevard Maréchal Foch, in Beaune Saturday 18 and Sunday 19 November 2017 from 10:00am to 6:00pm

Gourmet tasting of seven wines with five food and wine pairings
- Earlybird rate €38 per person (for advance bookings and groups of 15+)
- Full rate €43 per person
