Varietal

100% Chardonnay.

Tasting notes

Color: pale gold with light green hues.
Nose: intense aromas recalling of grapefruit and cherry blossoms
Mouth: fresh and soft attack, displaying seductive flavors of lime, pear and hazelnut. The finale is lingering with saline notes.

Food and wine pairing

This elegant dry wine will be the perfect companion to all fish and shellfish, but also frog legs, veal stew, poultry in a cream sauce, goat and sheep cheeses.

Serving suggestions

Serve ideally between 12° and 14°C / 54 - 57°F.

Ageing potential

This wine will keep for at least 2 to 5 years in the cellar in good conditions.

Origins

An appellation which takes its name from the village of Chablis and is grown in the delimited areas of 17 villages. The appellation covers 3,712 hectares, making it the most extensive "Village" appellation in Burgundy.

It is characterized by producing exclusively white Chardonnay wines and by its geology which is believed to date back to the Kimmeridgian period.

The Chablis vineyards are planted on various hills in the valley of Serein, the peaceful river that crosses the region.

- Limestone soil and subsoil dating back to the Kimmeridgian.
- Slightly pronounced incline.
- South-west exposure.
- Altitude of 180 m to 260 m above sea level.

Vinification and maturing

The grapes and must went through a long pneumatic pressing to get a qualitative juice with no risk of oxydation. Then, it was left to settle in order to clean it up from the roughest lees and ensure pure aromas. The alcoholic fermentation took place in stainless steel tanks under controlled temperatures (18 to 20°C) to preserve a maximum of fruit and freshness from the Chardonnay. The malolactic fermentation was completed in order to get more roundness and then, the wine was aged on its lees for 7 months, to develop some complexity while keeping all its freshness.

Vintage : 2015

Vintage 2015 started with an uneven winter: mild at the beginning, very cold in the end. At springtime, the buds were long to burst and came by mid-April. Then mild temperatures favored the growth of the vegetation. The first flowers bloomed in the beginning of June which finally was about 10 days earlier than the last 10 years in average. In July, very high temperatures created hydric constraints and the bunches closed while the berries were still little. At the end of July, the drought symptoms were more and more frequent on the leaves and the vegetative cycle was slowed. Ripening started on the first half of August with temperatures 2°C higher than the average. This climatic conditions helped getting healthy vines and a quick maturing. Unfortunately, a violent hail storm hit the Chablis region on the night of September the 1st constraining the vine growers to harvest the damaged plots. However, the heat of the last weeks of September allowed the vine growers to obtain highly qualitative musts. The last grapes were pressed on September 21st and the entire crop was particularly balanced and promising.
