Color: Pale white gold.

Nose : Revealing its origins as a Burgundian wine made of rare Pinot Blanc with its floral notes.

Mouth: Full attack with citrus and toasted aromas, notes of butter, light minerals and a good length with lots of freshness. A lively, well-structured and harmonious wine.

Food and wine pairing

Drink on its own, as an aperitif, or with light entrées, delicatessen, crustaceans and noble river fishes. It will also be a great companion to goat cheeses or Gruyère, French Comté and Cîteaux.

Serving suggestions

Serve at a temperature of average 12 to 13°C (53 -55°F).

Origins

The appellation area extends around the commune that gave it its name, Savigny-lès-Beaune. It lies to the north of the Côte de Beaune, in the continuation of the Côte de Nuits, between Beaune, Pernand-Vergelesses and the Montagne de Corton.

The vineyards form a V, with the two branches separated by the alluvial cone of the Rhoin. As a result, we find a diversity of terroirs, ranging from gravelly, iron-rich soils on the Pernand-Vergelesses side, to reddish-brown limestone with more clay on the way down the hillside, to sandier soils on the opposite slope. This diversity produces the fruity, supple wines that are so characteristic of the appellation.

The appellation covers 383 hectares: 144 hectares of vines are classified as 1er cru and only 15% of the surface area is given over to white wines.

Vinification and maturing

Chardonnay and Pinot Blanc grapes were pressed immediately after the harvest. The juice was left to settle in vats where alcoholic fermentation began, before being transferred to barrels. The wine remained for 11 months in the calm of the cellar, half of it in barrels that had already been used once, a quarter in new oak, and a quarter in two-year-old barrels. The lees were stirred for two months.

Vintage : 2025

The 2025 growing season in Burgundy was marked by a rainfall deficit of around 30% compared with 2024, combined with an early harvest. The first cuts of the secateurs took place on August 25 in the Beaune Premier Cru vineyards, notably in Savigny-lès-Beaune (Clos du Roi and Marconnets).

Across the entire vineyard, harvesting began up to two weeks earlier than in 2024 and extended over a longer-than-usual period to adapt to weather conditions, which turned rainy at the outset of the harvest. All grapes were brought in on time: sanitary conditions were very good, and the fruit shows an aromatic concentration that suggests elegant, refined wines. While volumes appear stable compared to 2024, they nevertheless remain below the five-year average.

At the time of the first run-offs in mid-September, red wines were showing gentle extraction with fine colour. White wines, meanwhile, quickly revealed themselves to be rich, flavoursome and concentrated, while retaining fine freshness thanks to cool nights that preserved acidity.

In summary, 2025 is shaping up to be a vintage of character and quality, for both red and white Burgundy wines.
