Origins
Along with Puligny-Montrachet and Chassagne-Montrachet, the village forms what is known as "The Golden Triangle", reputed to produce the finest white wines in existence. Here, Chardonnay finds a perfect terroir, gently sloping and ideally exposed to the east or south, composed of limestone and marl.
Around 30% of the appellation's surface area is classified as 1er Cru, made up of 19 different climats.
Vinification and maturing
At the winery: the whole bunches of grapes were gently pressed for 2½ hours. The temperature of the must was cooled to 12°C and was transferred directly into barrels without racking in order to keep most of its lees. Long fermentation (up to 10 months!) using indigenous yeasts.
In the cellar: the wine was aged for 19 months without being racked or stirred to bring out all of its minerality. A proportion of 25% new French oak barrels that had been toasted at length at low temperatures to impart a very subtle, delicate touch of oak were used.
