Tasting notes

Colour: Dark ruby red dress.

Nose: Very fruity nose with aromas of raspberry, cherry and strawberry with a hint of liquorice.

Palate: A charming and well-structured wine in the mouth, revealing fine woody notes, a nice balance and peppery notes.

Food and wine pairing

A great wine to enhance quality poultry, a piece of beef or grilled pork ribs. Spring rolls, such as exotic, spicy dishes will also perfectly accompany the wine's peppery and fruity notes.

Serving suggestions

Serve ideally at a temperature of 14° to 16°C (57-60°F).

Ageing potential

A worthy representative of the great red Burgundies that can easily be kept for 5 to 8 years in good storage conditions.

Origins

Located in Beaune, the capital of Burgundy's great wines, the "Pavillon Bouchard", also known as the "Hôtel du Conseiller", still houses the Bouchard Ainé & Fils cellars and for generations has embodied the values of quality, elegance and prestige in the making and ageing of great wines, such as this Grande Réserve cuvée made from Pinot Noir grapes harvested from selected Côte de Beaune vineyards.

The Côte de Beaune-Villages appellation covers 14 communes: Ladoix, Pernand-Vergelesses, Chorey-lès-Beaune, Savigny-lès-Beaune, Monthélie, Auxey-Duresses, Saint-Romain, Meursault, Blagny, Puligny-Montrachet, Chassagne-Montrachet, Saint-Aubin, Santenay and Maranges. For red wines, these communes may choose to produce wine under their own appellation name or under the Côte de Beaune-Villages appellation. The vines are grown on light stony soils, brown limestone and marly limestone, on varied and often steep slopes, facing south and south-west, at altitudes of 240-400 metres.

Vinification and maturing

The grapes were hand harvested and sorted at their arrival at the winery. Maceration and alcoholic fermentation lasted 3 weeks in wooden vats. The juices were then placed in barrels for a part (60%) and in tank for the other part for a 14 months ageing period. The resulting wines were then blended together to get this Grande Réserve cuvée showing a perfect balance between fine wood, body and fruit.

Vintage : 2025

The 2025 growing season in Burgundy was marked by a rainfall deficit of around 30% compared with 2024, combined with an early harvest. The first cuts of the secateurs took place on August 25 in the Beaune Premier Cru vineyards, notably in Savigny-lès-Beaune (Clos du Roi and Marconnets).

Across the entire vineyard, harvesting began up to two weeks earlier than in 2024 and extended over a longer-than-usual period to adapt to weather conditions, which turned rainy at the outset of the harvest. All grapes were brought in on time: sanitary conditions were very good, and the fruit shows an aromatic concentration that suggests elegant, refined wines. While volumes appear stable compared to 2024, they nevertheless remain below the five-year average.

At the time of the first run-offs in mid-September, red wines were showing gentle extraction with fine colour. White wines, meanwhile, quickly revealed themselves to be rich, flavoursome and concentrated, while retaining fine freshness thanks to cool nights that preserved acidity.

In summary, 2025 is shaping up to be a vintage of character and quality, for both red and white Burgundy wines.
